Our Story
When IBS forced some of our family to go gluten-free, we discovered a problem: there was no acceptable option for Shabbos challah.
Going gluten-free brought relief from IBS symptoms, but created a new challenge. We needed challah for our table, but everything we tried over two years fell short. They didn’t taste good, the texture was heavy and dense, and ironically, many options were hard to digest—defeating the whole purpose of going gluten-free.
So we decided to solve it ourselves.
After a year of development and another year of perfecting the recipe with family members who needed it, we discovered the key: slow sourdough fermentation combined with precisely balanced fiber ratios. This creates rolls that are light and airy instead of the typical dense, heavy texture.
We started sharing with friends, then worked with the KCL to ensure our rolls met the halachic requirements for Hamotzi bread—requiring “Washing” and “Bentching”. Now we produce small batches several times a week in our dedicated kosher kitchen.

Frozen & Ready
Pick up your rolls frozen in baking pans. Store them in your freezer until you need them—they keep beautifully.
Defrost & Rise
Plan ahead to defrost—typically about 4 hours at room temperature, or proof in a warm oven to accelerate.
Bake Fresh
Pop them in the oven for the aroma and taste of fresh-baked challah. Detailed instructions included with each order.
Bonus: Since they’re sold raw, you can add toppings or use the dough for pizza or calzones.
Frequently Asked Questions
Are these rolls certified as Hamotzi bread?
Yes! Our rolls are certified by the KCL as proper Hamotzi bread. One roll is sufficient for “Washing” and “Bentching”. We worked closely with the KCL to ensure this certification, as it’s crucial for our community.
For those unfamiliar: Hamotzi is the blessing recited over bread. “Washing” refers to the ritual hand-washing and blessing said before eating bread. “Bentching” is the Grace After Meals prayer required after eating a bread meal.
Why oats instead of other gluten-free flours?
For challah to be considered proper bread from a halachic perspective, it must consist primarily of one of the five grains: wheat, rye, barley, oat, or spelt. Since wheat, rye, and spelt all contain gluten, certified gluten-free oats are essentially the only practical option for true gluten-free Hamotzi bread.
Are oats safe for celiac disease?
We use only certified gluten-free oats processed in dedicated facilities. Most people with celiac disease can safely consume pure, uncontaminated oats. However, a small percentage of celiac patients may also be sensitive to avenin (the protein in oats). If you’re unsure, consult your doctor before trying oat-based products.
Why are oats usually hard to digest?
Raw or minimally processed oats contain compounds that can be difficult for sensitive stomachs to break down. Our 100% sourdough fermentation process transforms these compounds over time, making the oats much gentler and easier to digest—even for people who typically struggle with oat products.
How is your sourdough process different?
Most sourdough breads add starter or levain to regular dough, then let it rise for a short time. Our oat dough is 100% sourdough—meaning every bit of the flour has undergone complete fermentation. This extended process is what creates both the superior texture and improved digestibility.
Who can benefit from these rolls?

How do I store and prepare the rolls?
Store frozen in your freezer. When ready to bake, remove from freezer and let defrost at room temperature (typically about 4 hours, though timing varies). Once risen, bake according to the detailed instructions on the label. Baked rolls also freeze well if you want to bake extras.
Can I use these for things other than rolls?
Absolutely! Since they’re sold raw, you can shape them however you like, add toppings before baking, or use them as pizza or calzone dough. Some customers get creative—we’d love to hear what you make with them!
